L’Antica Pizzeria da Michele Appoints New Director of Operations

To uphold owner and designer Francesco Zimone’s vision for delivering approachable service and welcoming hospitality, L’Antica Pizzeria da Michele Los Angeles onboards seasoned hospitality guru Marino Monferrato as director of operations. With a dedicated passion for unmatched customer service and decades of experience at the helm of Michelin-starred restaurants and world-renowned hotel groups, Monferrato brings an extensive range of expertise to the famed pizzeria.

Early in his career, Monferrato was mentored by Michelin-starred chef Gualtiero Marchesi, who is considered the founder of modern Italian cuisine and taught Monferrato tenets of proper service. Through his strong work ethic, Monferrato paved a successful career in the hospitality industry, including managing hotels and restaurants, overseeing staff and customer service, building brand recognition, and leading corporations at an executive level. Notable career highlights include positions at San Francisco’s Masa with chef Ron Siegel and CUT by Wolfgang Puck at the Palazzo Hotel in Las Vegas; opening Michelin-starred restaurant Alex in the Wynn resort in Las Vegas; and leading the opening team at Cecconi’s and Eataly in Los Angeles—a herculean task that remains one of his greatest accomplishments.Additionally, Monferrato has served as the on-camera maître d’ on Gordon Ramsay’s Hell’s Kitchen for seven consecutive seasons since 2013.

In his new role as director of operations, Monferrato will oversee da Michele’s front of house and back of the house staff, upholding excellence in customer service and a refined hospitable culture at the restaurant. He is committed to providing an elevated experience, ensuring guests feel welcomed at da Michele, as if it were his own home. In the coming months, he looks forward to building effective teams and developing in-depth employee training and development to support the U.S. expansion of L’Antica Pizzeria da Michele.
