La Pasta Fresca to Open at Eataly L.A.
On September 3, Eataly L.A. will open La Pasta Fresca, housemade pasta bar. The newest eatery at the 67,000 square-foot Italian marketplace will offer high quality pasta dishes and thoughtful wine pairings, ready to enjoy in a matter of minutes. Ideal for hungry Century City locals and weekend mall goers alike, La Pasta Fresca offers authentic fresh pasta recipes for a true taste of Italy.
Before the fresh pasta even hits the boiling water, the Eataly pasta makers have carefully constructed each shape by hand. The fresh orecchiette and ravioli, for example, are then seamlessly transformed into inspired regional specialties from across the boot. La Pasta Fresca will serve five classic dishes, called ‘The Classic Pasta’, along with one daily rotating dish, ‘The Daily Special’. Made to order, there is a pasta to please every palate, from classics like Tagliatelle alla Bolognese, long egg pasta ribbons with a classic meat ragù sauce typical of Bologna, or lesser known dishes like the Mafaldine al Pesto with the famous basil sauce from Liguria. To complete the housemade pasta, dishes will be garnished, filled, and sauced with authentic ingredients from our marketplace including Parmigiano Reggiano DOP and Grana Padano DOP, Mutti cherry tomato sauce, Italian prosciutto, and housemade mozzarella. California touches can also be seen throughout the menu with the addition of fresh caught shrimp and locally grown zucchini and eggplant. All pastas will be available for under $20 and will be served with our rustic bread.
La Pasta Fresca will exclusively source pasta from Eataly’s very own fresh pasta counter, where expert pastai mix, knead, cut, and form each shape according to artisanal Italian methods. Guests can catch the magic daily, as the pastai roll out sheets upon sheets of the simple egg and flour dough, before individual tagliatelle and agnolotti are precisely sliced and/or filled with seasonal ingredients. In order to achieve the rich flavors and golden color in the fresh pasta, Eataly uses naturally fertilized eggs with a bright, red yolk from local farms and “grano duro” semolina flour produced by Molino Grassi, an Italian mill in Emilia-Romagna.
In true Eataly spirit, each pasta will be paired with regional Italian wine chosen by our beverage experts. From Rosso pours like Cabernet Merlot (Zamò Rosso) and Dolcetto (Fontanafredda) to Bianco choices like Sauvignon Blanc (Bastinach) and Chardonnay (La Zolla), guests can match vino with their dish accordingly. Rosé, sparkling, and beer options will also be available. Perfect for an out of office lunch or casual weeknight date night, the restaurant-quality pairings will transport diners to an Italian trattoria.
La Pasta Fresca will serve as the newest addition to Eataly’s range of unique eateries, such as our Italian panini counter, build-your-own salad bar, and our Roman-style Pizza Alla Pala. La Pasta Fresca will be open daily from 11 a.m. to 9 p.m. at Eataly Los Angeles within Westfield Century City, 10250 Santa Monica Blvd., Los Angeles.
